Ushbu maqolada sharbat ishlab chiqarish sanoatida qo'llaniladigan ekstraksiya jarayonlarining nazariy asoslari, zamonaviy qurilmalar va texnologiyalar tahlil qilinadi. Meva-sabzavot xom ashyosidan foydali moddalarni yuqori unumdorlik bilan ajratib olishning fizik-kimyoviy qonuniyatlari ko'rib chiqiladi, shuningdek, ekstraksiya usullarini takomillashtirish yo'llari va energiya tejovchi innovatsion yechimlar taklif etiladi. Zamonaviy ferment preparatlari, ultratovush va membrana texnologiyalarini integratsiyalash orqali sharbat hosildorligi va sifatini oshirish imkoniyatlari muhokama qilinadi.
